In this hands-on course, we’ll explore how to bring out the best in every ingredient, using well-balanced combinations that don’t require extra spices or seasonings. We’ll also dive into the art of natural wood smoking, specifically cherry wood, to give the dish a distinctive and aromatic touch.

Luca Bini will demonstrate the preparation of:

Smoked Pork Tenderloin Roast: A pork tenderloin stuffed with spicy aged gorgonzola and plum compote, wrapped in Parma prosciutto, and encased in natural pork netting. The slow cooking process and cherry wood smoking will create a deep, complex flavor, perfectly balancing sweetness, intensity, and aroma.
