Beyond the Classic Fiorentina: The New Nobility of Steaks
An advanced course dedicated to steak cuts that go beyond traditional Italian classics, selected for their gastronomic potential and versatility. We’ll analyze muscle anatomy, fiber structure, marbling, and cooking yield. Then we move to the practical side, exploring both direct and indirect cooking techniques — traditional and modern — including heat management, resting times, finishing, and the use of rubs.
Straight to the point: enough with the usual steaks.
