The Picanha Way: The Art of Slicing
In this Academy dedicated to sliced picanha, we’ll discover how to enhance one of the most iconic cuts of the South American tradition. After an introductory classroom session, we’ll move outdoors for the practical part: the picanha will be cooked in two different ways — one grilled over moderate heat, following the traditional South American approach, and one cooked on a rotisserie. Simple, no-frills techniques designed to highlight the meat and demonstrate how a few precise gestures can make all the difference.
This Academy will conclude with a live demonstration, tasting, and direct comparison of the results.
