With this Masterclass, we move to South America! Forget smoke and long cooking sessions in a closed pit. In this event, we will explore the philosophy of heat through the most iconic South American cuts — from Asado de Tira to Vacio.

We will examine how the geometry of the cross-cut transforms a tough part of beef into a masterpiece of textures, where the science of the raw material meets the art of managing the flame.
