In this course, we’ll guide you through every step of preparing this legendary cut, immersing you in the heart of authentic Texan BBQ tradition.
We’ll start by exploring the anatomy of brisket, learning to identify its different sections for optimal preparation. Together, we’ll work from a raw brisket to create the perfect BBQ cut: trimming to balance the fat and ensure even cooking, followed by seasoning to enhance the meat’s natural flavors and achieve that irresistible bark.
We’ll dive into the theory behind each stage of cooking, covering the smoking process, stall management, wrapping, and the crucial importance of resting. While we won’t be cooking together, we’ll discuss techniques and tips to help you confidently recreate a flawless brisket.
Participants will have the opportunity to clean and shape their brisket for BBQ cooking, while learning the right technique for applying the rub. And at the end? You’ll get to taste authentic brisket, Texan style.
