In this course, we will tackle every stage of preparing this legendary cut, taking you straight to the heart of authentic Texas tradition.
We will work together starting from a raw brisket to achieve the perfect BBQ cut: Trimming to balance the fat and ensure even cooking, and seasoning to enhance the natural flavor of the meat while ensuring a savory crust (bark).
We will then dive into the theory behind the different cooking phases, covering every detail necessary for perfection: smoking, managing the stall, wrapping, and the vital importance of resting.
And at the end? You’ll get to taste an authentic brisket in pure Texas style.
