Create Your Own Rub: From the USA to Mediterranean Style

In this course, we will learn how to build a seasoning from the ground up, starting with the great American classics: the essential pepper-based Texas style, the sweet blends of Kansas City, the garlic and onion notes of Memphis, and the pungent profiles of the Carolinas. We will explore how to adapt these traditions to our own palate, creating a Mediterranean style that highlights local aromatic herbs, citrus notes, and the signature flavors of our cuisine.

You will learn to master the correct ratios of salt, sugar, and spices, studying how each ingredient contributes to forming the bark without overpowering the natural flavor of the meat. By the end of the session, you’ll be able to put the pre-made recipes aside: you will learn how to calibrate every weight and aroma to build your own signature rub using a practical, repeatable method.
